One year after launching the nunc., Next Level Coffee shows at IFA what is possible when innovation doesn't stop at hardware but is driven forward by fully harnessing a connected data system.
Next Level Coffee officially introduced nunc., its connected espresso system, to the market for the first time at IFA 2025. But the system is more than a "smart" coffee machine. Its unique process is built on the interplay of software and hardware – and on translating a physical process into measurable data. Always with the goal of making coffee as a natural product predictable while creating a highly intuitive user experience.
nunc.'s proprietary algorithm has by now been trained on over 200,000 shots of espresso. Each individual shot is measured by sensors to compare the actual state with the ideal state and derive insights for every extraction that follows. This level of experience simply makes nunc. the world's most experienced barista – measured in data points, not years.
But nunc. doesn't just get better with each shot: its constantly growing knowledge base also lets it predict the ideal extraction parameters for every espresso before it's even brewed. By recognizing each bean's individual properties via NFC, the system automatically adjusts grind size, pressure, temperature and extraction before the first drop even falls.
This interplay makes nunc. the first espresso system that understands the coffee bean, and where shot quality no longer relies on the familiar trial-and-error process.
How network learning becomes the differentiator
Every nunc. learns not only from its own extractions, but from every espresso brewed on a nunc. anywhere in the world. Next Level Coffee thereby applies the principle of fleet learning from the world of autonomous vehicles to the human sensory experience of great taste.
This exact network effect is what enabled the April 2026 launch of anybeans™: the first system that automatically determines the ideal recipe for any coffee bean and configures the machine accordingly – always running on the algorithm's latest knowledge, thanks to its cloud connection. By scanning the details on any bag, nunc. adds it to a growing library of known beans and roasts. The algorithm then applies everything it has learned from over 200,000 shots to determine the ideal extraction for that specific bean – making truly individual taste accessible to everyone, and every espresso consistently perfect, backed by an AI-driven success guarantee.
While hardware and software can be replicated, what nunc. does every day cannot: the continuous measurement and analysis of hundreds of thousands of espresso extractions. That's where the resulting data base – and the advantage Next Level Coffee has built with nunc. – truly lies.
